“This is my favorite part...” I think to myself as I sip a well-rounded Guatemalan coffee.
This was one of two Guatemalan options we had this season, and actually one we passed on.
Yes, above a creamy latte or a bold double shot, my tastes are best suited by a handcrafted cup of black, single origin coffee.
What is Single Origin Coffee?
It’s just what it sounds like, a coffee with a single origin; grown on one specific farm.
You see, coffee beans are subject to the their surroundings. Soil for example, provides the minerals and nutrients that shape a bean’s flavor. Whether grown in the volcanic soil of Kenya or the limestone and clay-rich soil of Guatemala’s Cobán region, each coffee paints a picture of the land and climate in which it was grown.
I enjoy reading each coffee’s unique “story” without obscuring its distinct individual flavors that differentiate it from every other coffee in the world. In this fashion its possible to take the daily cup of coffee from a mindless routine to a genuine experience of complete engagement.
Next week I’ll introduce our current single origin offerings and their individual characteristics.

The recipes themselves aren’t unique or groundbreaking. Instead we focus on quality ingredients and attention to detail.
For example, the base of any espresso beverage is what?
You guessed it… Espresso.
This is why our baristas are extensively trained on extracting the perfect shot. If a shot of espresso falls outside of our “Perfect Shot Parameters” it doesn’t make it into your drink.
We have chosen Tontine Espresso from Katz Coffee in Houston as our house espresso. We’ll talk about Tontine in more detail in an upcoming post so stay tuned.
Milk is another also extremely important.
After awhile you can tell by just listening if a barista is properly steaming milk. Put our baristas to the test and you’ll be pleasantly surprised with the accuracy and consistency of your latte or cappuccino.

We finally found it...
Our goal has always been to build the absolute highest quality beverages we can. This goal requires a constant questioning, comparing, and re-evaluating of our products. This is especially true with our Chai.
How? ...because back in 2005 I worked in a shop in Austin, in which the owner’s mother would send him authentic masala chai from India. Since then I had never found such a perfect balance of sugar and spice in a chai, until last summer.
We are now proud to serve Maya Chai, and would like to share some of our chai favorites with you!
