Our current focus is on our Chai, and as I sat down to start this blog post I got to thinking about why we do what we do. Our goal here at Stellar Café has always been to build the absolute highest quality beverages we can. This goal requires a constant questioning, comparing, and re-evaluating of our products. This is especially true with our Chai.
In our four years of serving San Marcos, we’ve actually made a few changes in the Chai department. In June of last year we had the privilege of attending Coffee Fest Dallas, and it was there that we got acquainted with Manish and the fine folks at Maya Tea. We were quickly drawn to Manish’s passion for tea. At the time we were happy with our Chai, but knew there was something better out there. Why? Because back in 2005 I worked in a shop in Austin, in which the owner’s mother would send him authentic masala chai from India. Since then I had never found such a perfect balance of sugar and spice in a chai, until last summer.
We are now proud to serve Maya Chai, and would like to share some of our chai favorites with you!
Our Chai Latte blends the sugar and spice of chai tea with creamy whole milk. Its so simple, yet so delicious. Feel free to opt for the milk or dairy substitute of your choice, and enjoy hot, iced, or even as a frappé!

Kick things up a notch by adding our rich, bold espresso to a Chai Latte. Also known as a “Dirty Chai,” the Hotsy Totsy can be enjoyed hot, iced, or as a frappé.
For a unique change of pace, try our chai with a Topo Chico. Akin to a root beer, this soda is sure to spice up your afternoon.
If you can never get enough spice, ask for our Devi Chai in any of these beverages. Devi Chai is a fired up version of the original formula, with intensified masala spices!
Last week we laid out the basics of our Café Frappé: Espresso + Organic Dairy blended with Ice = rich, creamy, frozen, delicious, dreamy, amazing…you get the picture.
Although we can make any of our flavored lattes into a Frappé, today I’d like to share a few of our favorites with you. These Stellar Specialties are available year ‘round as lattes, hot OR iced, and yes... Frappés!
Take our classic Café Frappé, add a cinnamon-roll flavor twist, and you’ve got The Showboat! Rich caramel, cinnamon spice, and molassessy brown sugar blend into our frozen Frappé so delectably. You can stop there, or top it off with our Toasted Marshmallow whipped cream and a caramel drizzle for no additional charge!
The Model T
Appropriately named after a timeless classic, The Model T puts a Stellar twist on the Mocha Frappé. The Showboat is our classic Café Frappé, with Dark Chocolate and a touch of Toasted Marshmallow sweetness. These flavors are made with pure cane sugar, no high-fructose corn syrup here! Enjoy it with or without a Toasted Marshmallow whipped cream topping and Dark Chocolate drizzle.

What’s a Frappé?!
The word Frappé has a French origin, meaning “iced,” and has recently become the name of choice for “blended espresso beverages.” Here at Stellar Cafe, our original Espresso Frappé consists of espresso and an organic dairy base, blended with ice.
That seems pretty simple, what’s so special about it?
I’m really glad you asked! Most coffee shops prefer to use a powder base, due to its ease of use and its cost. After sampling MANY different powder bases and comparing them to our organic dairy base, the choice was clear. We want our customer to enjoy the creamiest, richest, highest quality Frappé available. Our organic dairy base consists of all organic ingredients including whole milk, cane syrup, and cream. Although it's priced much higher that powder bases we find it’s worth every penny, and we know you will too!
Once you have the basics down the options are endless. From flavors, to drizzles, to our toasted marshmallow whipped cream, tune in next week as we share some of our favorite frappé creations!

Continuing on with Arnold Palmer’s iced beverage of choice, we’re putting another twist on the old classic with another summer time favorite: The Main Squeeze!

Great question! Red Espresso is essentially a Rooibos Tea. We’ll jump into greater detail on Red Espresso in an upcoming blog post, so stay tuned!
The Main Squeeze is a double shot of our Red Espresso, poured over traditional lemonade, creating the most refreshing iced beverage for a hot summer day. Last week we covered the basics on what makes our Iced Toddy so smooth and delicious. Today I’d like to spotlight a few of the many possibilities you have when it comes to crafting your perfect Toddy beverage.

First I’d like to introduce one of my favorite summertime treats, our Toddy Float!
Start with one or two scoops of creamy, rich vanilla ice cream and top that off with our Iced Toddy. Dessert? Beverage? That’s totally up to you.
Since our Toddy brewing process yields a concentrate, we have the option of diluting that concentrate with something other than just water. In this case, we add milk (or milk substitute) to the concentrate to make a smooth and creamy, cold brewed version of a latte.
We feature a flavored coffee at all times. Not only do we brew it hot, but we also set some aside to cold brew! Some of our recent favorites have been Blueberries & Cream, Triple Bean Vanilla, and Hill Country Pecan. Next time you’re feeling adventurous, ask about our current flavored Toddy!

What is Toddy you ask?
Toddy is one of many methods of “Cold Brewing” coffee, and the method that we adopted here at The Stellar Café years ago. But before we get into that…
What’s the difference in “Iced Coffee” and “Cold Brew?”
This is a very common question that we feel deserves any coffee drinker’s attention. Iced Coffee is most commonly just hot coffee poured over ice. Cold Brew Coffee is the process of steeping coffee grounds in cool water for an extended period of time. The grounds are then filtered out using both a paper and mesh filter, leaving you with a coffee concentrate.
We prefer this method for a few reasons. Since the coffee never comes into contact with heated water, it is around 65-70% less acidic than hot coffee. The concentrate produced also gives more product options, but more on that next week.
Every drop of our Toddy is brewed using a Sumatran dark roast. This coffee is already low in acidity, but rich in flavors like dark chocolate and brown sugar. After brewing at room temperature for 24 hours, our Toddy is ready to be enjoyed. We recommend trying it strait up the first time. You’ll be surprised at how simple, yet satisfying an unadulterated cup of cold brew can be.
